Method

  1. Take 2 eggs out of the fridge and let them sit while the pan heats. Room temperature eggs spread less and hold a rounder shape.

  2. Put a nonstick skillet on low to medium-low heat. Low is the whole trick here. High heat makes the bottom rubbery before the top is ready.

  3. Add 1 tablespoon of butter and let it melt. It should foam gently, not sizzle hard or brown. If it browns, pull the pan off the heat for 30 seconds.

  4. Crack each egg into a small bowl first, then slide it into the pan. Cracking straight into the pan is how you get shell in your breakfast.

  5. Cook undisturbed for 2 to 3 minutes. Do not touch, flip, or stir. The whites turn from clear to solid white starting at the edges.

  6. Season with salt and black pepper once the whites have set. Salting earlier can leave little spots on the yolk.

  7. Check the whites around the yolk. When that last clear ring turns white and the yolk still jiggles, it is done. About 3 to 4 minutes total.

  8. Slide it out with a thin spatula, tilting the pan to help it go. Serve right away. The yolk keeps cooking on a hot plate.
